Single vineyard wine from South Australia. The place is the point.
Pare was named for one principle: paring back to what's important. The fruit leads. The site speaks. We try not to interrupt. Every wine we make is labelled by vineyard and vineyard only — because that is where the wine begins and ends.
The name
The name Pare is a statement of method. Pared-back winemaking — where the fruit and the character of the site are the priorities, and the winemaker's job is to get out of the way. Not to be absent, but to be deliberate in what is not done.
Australia has long excelled at promoting the brand or the winemaker. Pare is not the first label to put the vineyard first — but it is the commitment we have made from day one. The wines are not named for a house style or a blend. They are named for where they come from.
The approach
We source fruit across the different subregions of the Adelaide Hills and McLaren Vale — elevated sites in cool subregions, selected for what they bring to the varieties we work with. Grenache thrives in the sandy dunes of Blewitt Springs. Chardonnay grown on the hills of Kenton Valley and Forreston.

— Ansel AshbyIn the winery, the intention is the same: let the fruit tell the story. Intervene when required, but not excessively. The differences in our wine come from the vineyard — soil, elevation, aspect, vine age.
The range
Each wine in the Pare range carries a single vineyard name — no blends, no house style imposed across sites. Grenache comes from McLaren Vale, Chardonnay from the Adelaide Hills. Which wines we make in a given year depends on what the vintage gives us.
The ambition is to keep adding vineyards as we find sites that have something distinct to say. Not to grow for the sake of it — but because there are subregional differences worth exploring, and the best way to explore them is one site at a time.
The people
Pare is the work of two founders. Ansel Ashby and Andrew Williams have years of experience across all aspects of the wine industry, and a deep devotion to the project. Between them they handle every part of the business, from vineyard selection to getting bottles out the door.
